Are you looking for a dinner recipe for a birthday, anniversary or any other special occasion? Try our wonderful lemon salmon that works well with a salad and wild rice. It is very simple to cook but tastes restaurant quality. Here is what you have to do to make this easy but romantic dinner for two.
You will need one lemon, a few rosemary springs and two salmon fillets. Additional ingredients are coarse salt (you can use pink salt if you like) and a tablespoon of olive oil. First, cut the lemon in thin round slices and ensure that the juice remains intact.
Now take a baking tray and place four slices close to each other. Put two to four fresh rosemary springs and then place a salmon fillet on top.
Layer another four slices of lemon on top and add a couple of rosemary springs too. Repeat with the other fillet. Drizzle olive oil on both fillets and let all flavors infuse.
In the meanwhile, preheat oven to 400 degrees. Now place the baking dish in the oven and let it cook for another 20 minutes. The fish should become tender and flaky. Serve.
For sides: wild rice
Take some wild rice (about 1 cup) and rinse it under cold water. Now take some water in a medium sized saucepan and add 4 cups of water along with the rice. Let the water boil. Once done, simply let the rice simmer for another 40-45 minutes. It will be ready to when it is not crunchy anymore.
For sides: veggie stir fry
You don’t have to buy fresh produce for this one. Simply take all vegetables available to you and stir fry them in a pan for a good 3 to 5 minutes in olive oil. When done, app some sesame seeds for garnish for a crunchy surprised.
For sides: steamy asparagus
For this dish, you just need a handful of asparagus, tomatoes and cheese. First, blanch the asparagus in a skillet for 5 to 10 minutes or until it gets tender. Then, take a pan and heat a tablespoon of olive oil. After this, stir fry the asparagus for 1 to 3 minutes. If you have grape tomatoes, add to the skillet and finally some grated parmesan cheese. Cover the lid and let all the ingredients cook for another 1 to 3 minutes or until the cheese melts. Serve hot.
Place the salmon in a serving plate and season with some pepper if you like. Now add some freshly baked bread or store bough French bread to the plate and serve with the sides of your choice. A good addition to your awesome dinner will be a lasagna or a pasta. You could also serve it with a vegetable salad of your choice. Don’t forget a classy pinot noir to add to the mix and make your dinner more romantic than ever.
